Ingredients
Base
180g | oats (2 cups) |
100g | nuts / seeds (I used pumpkin and sunflower) (3/4 cup) |
1/2 | tsp salt |
3/4 | tsp cinnamon |
50g | coconut oil (1/4 cup) |
45g | maple syrup (1/4 cup) |
45g | chocolate chips OPTIONAL (1/4 cup) |
50g | dried fruit or FD fruit OPTIONAL (1/3 cup) |
This is officially my favorite breakfast, and now afternoon snack too, on top of smoothie bowls, in oat milk or even dry. CRUNCHY, CRISPY, GOLDEN and you can pack it with the good stuff (ie extra choco chips, dried fruit and seeds). Feel free to mix different seeds in, I tried a version with hemp, pumpkin and sunflower for extra prptien. Literally takes 5 minutes to whip up!!
METHOD
- Preheat the oven to 180C
- Combine the oats, nuts/seeds, cinnamon and salt
- Stir in the maple and coconut oil and ensure all is coated
- Spread it out a lined baking tray and bake for 20-22 minutes until mostly golden
- Leave to cool and then stir in the chocolate and dried fruit if you wish. Serve with oat milk!
