Raspberry chia jam (I use homemade - 60g frozen berries, 40ml date or maple syrup, heated in a pan for 2-3 mins, stir in 1 tbsp or 10g chia seeds and leave to set , cool and thicken up)

METHOD
Melt coconut oil
Mix up ingredients
Roll into thin sheet ~ 0.5cm
Use cookie cutter to shape
Bake at 180 degrees for 6 mins
Set aside to cool for 30 minutes
Spread PB on one cookie, spread jam onto another cookie and sandwich together
