Ingredients
BASE
30g | coconut oil (melted |
50g | cacao powder |
30g | agave syrup or maple |
120g | oat flour |
2 | tbsp coconut sugar |
FILLING
140g | pitted dates (medjool) |
60g | dried cranberries |
70g | sultanas |
2 | apples peeled, cored and sliced |
60g | coconut sugar |
1/2 | orange, juiced |
1/2 | tsp cinnamon |
1/2 | tsp ginger powder |
1/4 | teaspoon nutmeg |
1/2 | tsp all spice |
THE MOST DELICIOUS MINCE PIES WE’VE HAD TO DATE. A SWEET, FRUITY AND SPICED MINCE FILLING ON OUR HOMEMADE OATY PIE CRUST.
METHOD
- Preheat the oven to 180C. Melt the coconut oil and mix the base ingredients in a bowl until you have a sticky dough
- Line a muffin tray with silicon moulds or paper cases, divide the dough into 4 pieces and press the dough into each mould
- Add the filling ingredients into a sauce pan and simmer for about 20 minutes until the apples are soft
- Pour the filling into the pie crust and bake for 10 minutes or until the toppings are golden brown. Cool for 5 to 10 minutes and serve warm with a scoop of icecream or single vegan creame serving and this will prevent your chocolate from cracking at the top. Serve with a huge cup of chai and devour
